My Question is can I just crimp off one side of the rear brakes? This car only needs to work through the winter then its off to the recycler.

Don't do that if one side rusted there are more places coming right along as well so unsafe. Line is dirt cheap just requires some tools and knowing how to use them so if to be used again fix it.

About any parts outlet will have line, tubing cutter and the flaring tool isn't that bad. What hurts is if rusted bleeders are probably in trouble and it can make it "Domino" to more than line alone and requires full understanding of brakes to know it's safe. Hey it's not just for you it's your responsibility to be able to stop with a known hazard now and more lurking.

Get experienced help to learn line and bending it perfectly and making the flare nut ends, send it out or decide to give up now. Labor intensive (time wise) usually not just line.

BTW - bending it off isn't always going to work at all plus you can't bleed that after that worth a dang,
