engine temp malfunction

Hello, I am new to this forum and I am looking for any insight that someone may have on this problem I am having with my truck. 2015 ram 1500 this only happens in the Winter.. I will start my truck and start driving for around 10-15 minutes. Truck is about half to normal operating temp before the heat gauge sky rockets to the point it wont even read out the temp reading. I shut the truck off and immediately turn it back on and everything goes back to normal. Ive been to the dealership a couple times and the only thing done so far is the temp sensor changed. but still is doing the same thing. Summer months or anytime above freezing this will not happen. I don't know if that temp reading on the dash refers to engine temp or ambient temp but it obviously has a problem in the circuit as it is reading -22C.
