i got a 04 pontiac grand prix the car over heats sitting there no fans come on till it gets to almost over to overheating but turn a/c on both fans come on and keep engine cool at normal temp, changed themostat and coolant sensor, no lose of coolan fluid eather, im stumped

That's because there is nothing wrong with the car. That is exactly how it is designed to work.

? It changed so that would bug me. Yes, using A/C frequently forces fans to go full blast. It may not have been full of coolant and may not be now either.
May be normal but the change would make me investigate - starting with checking actual temp (infrared thermo at thermostat outlet) or sometimes temps of heater outlet air give a clue.
Did air temp (weather) change suddenly? Gauge could be wrong?
Does it stay stable at speeds over like 40 all the time? I say it should or would be ticked at the design as if anyone would care that designed it,

It probably changed because you were using the AC at the time which can make it run cooler because the fan runs all the time. Without the AC the fan isn't programmed to come on until about 225 degrees.
Make sure the coolant is full and you don't have any loss but I wouldn't be too concerned beyond that.
