I need HELP!!

I have a 1999 monte carlo le 3.1 eng ,What happens is 2 things ,
1. I lose water some place ,I have ran pressure test .looked around heater core,radiator,hoses replaced ,thermostat and sensor replaced,no water/antifreeze on ground and i havent seen any coming out of tail pipes yet it will climb uptoo 250 degrees when it does heater doesnt work right it will blow cold air,when the temp is in normal running range heater blows hot and everything works as it should .I still have to fill it up almost everytime now with straight water till i fix it .
2. When it is a nice sunny day the car runs great,if it rains forget it , you can start car and it idle fine then you go to give it gas ( still in park ) it wont go take it like it is chokeing out coughing backfireing thru the intake,lucky to get it to rev too 2 grand,sometime when you do drive it top speed maybe 30 before it starts to same ,I have replace plugs and wires and fuel filter,I was getting codes 300,401,374,341
The 401 is a egr I did find the air passage way thru the manifold clogged and cleaned it out.

There is air in the coolant system...it has to be purged.Second thing is the spark is grounding itself out between the sparkplug and the coil....try to looking for an arcing around these....best time is when its night and if nothing can be seen spray a little water on the area then look.
