Does anyone know how an oil leak could lead to damage to the other things, water pump, valve cover gasket, oil pressure switch, oil filter, etc.?

Old car, but well maintained. 2005 Dodge Caravan with 150k miles. We were going on vacation and would be driving 6 hours each way. Everything was working great. Never had an oil light go on, overheating or anything. Got an oil change and tire pressure checked, etc. @ jiffy lube the day before.
On vacation, we noticed the oil light went on and then quickly went off. It didn't go back on until a few days later on the return trip. It started flickering on and off as I drove back, middle of the night. Next day, I went back to Jiffy Lube and they said the oil was super super low. They showed me the stick, there was pretty much no oil. So, they filled it up and the oil light was still on. They then brought it in to check it out and told me the sensor was broken and I'd need to get that fixed, but not to worry about the light going on and off until then.
So, I'm driving the car and I notice it's overheating. This has never happened in any car I've driven and I was pretty scared. I think that I'm out of oil again. I find the closest Jiffy Lube and head over. It turns out that the oil level is ok, but it is very low on coolant and as soon as they put more in, there is more leaking out.
I get the car in to the mechanic asap and he says I need a new water pump, valve cover gasket, oil pressure switch and oil filter and may have engine damage. He first hypothesized that Jiffy Lube forgot to put oil in and then found that the oil brand new oil filter was leaking tremendously and said that was the problem. Without oil, everything got heated up and it was a domino effect.
OK......... sorry this is so wordy. Jiffy Lube said the water pump isn't connected at all and it's just mileage. Then, when I went to pick up my car from the mechanic, it was a different mechanic and he also said the water pump wasn't related. My little brother in law is in school to become a mechanic and he said it could be all connected.
I want to try to get Jiffy Lube to pay for what they are responsible for, whether it's just the oil filter or the whole thing. I don't know how to explain it because I don't understand it either.
Does anyone know how an oil leak could lead to damage to the other things?

Oil filter leaking, low to out of oil - checked by a NON Jiffy Lube mechanic.
Says it all. Of course it's all related if you can document this crap they will take care of it, if it needs a properly done new engine and probably does or you should demand it.
They are not professional auto anything nor most chain quicky places to be avoided like the plague IMO.
Full of fast smart-azz excuses why it couldn't possibly be them. Must be a bad oil sensor so just keep driving it!!!!!
I'd have gone postal! I know, you think it's old, has some miles but if you took proper care of this vehicle there's no real telling how much more you should really have.
Have you papers in order and by-pass the bullshat and speak to someone who will settle up properly with you about this. They have insurance and it happens way too often. Once the #1 engine buyer in the whole USA you'll have trouble finding that info but true.
Go for it and have proper included alternate transportation provided as well while it's fixed or vehicle replaced/paid for in whole for it's full retail value plus costs to change vehicles.
Sorry it happened. You are among thousands they don't want you to know.
I'm by no way judge or jury on this as there's room you are pulling a fast one too so let the documents (write it all down) speak and hope you have the papers from the shop that did look at it as well.

I was completely ignorant about Jiffylube's incompetence and didn't realize all this could happen. I felt so stupid as I've been telling people and it seems everyone else knows NEVER to use a quickie place like that for an oil change. NOW, I definitely know!
I'm just trying to figure out how to prove my case, when I have such little knowledge about cars. At first, I thought I could have them call the mechanic who worked on it, but then the second person said water pump was a separate thing (which confused me).
The mechanic did a couple tests and said the engine is ok. But, at first, they thought the engine may be gone too. I was kicking myself big time!

Don't kick yourself just get this fixed to your total satisfaction. If you just go above anyone at the place and get to a district manager with any papers they'll start talking and ABSOLUTELY DO PAY OFF!
Guess you can feel the anger I have for 100% marketing - probably endless reminders to come back, did they also sell you a new air filter, PCV valve or anything else and prove it really needed it? They used to give a buck to each sale over the oil change to the one who could sell it to you and there are things you could need legitimately for sure.
I'm ticked because of the very real folks I worked on their cars that really cared about their cars just might have gone to one and I get it next. OMG - drain plug threads all messed up or a trick plug because it was wrecked already there or just plain overtightened as if the thing is holding the whole car together!
Hey - The whole concept is enticing. You can get a service done on your way or way home from work or other errand in no time, have a beverage and watch a big screen TV while you wait!
Plain oil changing intervals are a pest for a lot of folks to actually drop off a car and pick up later - would be for me now. No, it would take me about an hour for an involved vehicle - everything right and double checked. Stupid things you don't think of like lube all hinges (hood latch and others too) all tires and if one is off find out where the leak is! If coolant low why? Gee, while under it saw some other leak or problem not looking for more work just folks should know. More - check spare tires when possible for pressure and is all the stuff there! Keeps going, check how old the battery is and mark it.
Always rotate tires and you are there anyway so write down what brakes look like! Mark with white crayon for tires what was done when and how good the brakes, anti-freeze protection level is and the date and miles.
What customers - they were my friends too and we both cared.
Granted that's red carpet service and most fascinated at how much checked and done and glad to know if something found.
Lost $$ doing routine oil services. Different deal as sole proprietor do exactly what is right. Reschedule something found if it could wait and have parts waiting as many I dealt with could and wanted to wait for some things.
You can still do this at a real shop with a real tech doing even oil changes, low on the totem pole but can ruin a vehicle over doing it wrong.
Sorry for the rant - it's just too common or was. I've been done with any biz for ages now but some things like this don't change. They couldn't possibly pay for real technicians to do this work so mistakes are just more likely plus rushing be quick as they advertise.
Just talk to the right person in charge first and head up to where someone takes you seriously.
One more: If you get told that just redoing it all and engine is all fine and get free next visit to shut up don't buy that. I'd want a 12+12 warranty that nothing will be found wrong caused by low oil meaning for a year or 12,000 miles in writing or they take care of it!
