97 VW Jetta 2.0L-Temperature Issues

97, Volkswagen, Jetta GT, 2.0L, 190,200 miles. Had to make a 10-15 mile trip yesterday and 3-4 miles in the temperature gauge went from Normal to 230 degrees. When it reached 230 degrees I stopped checked coolant level it was fine. When removing reservoir cap to release pressure once it cooled down enough it still boiled out of the reservoir more than it should have for a good 2-3 seconds. After it settled the coolant was sucking in and then coming back to the surface of reservoir. First thought was thermostat may be stuck. Continued trip after letting the car cool down and replaced lost coolant as well. For remainder of the trip the temperature moved back and forth from normal to 230 degrees but never fully overheated. As this all kept occurring the heater started blowing cold air for two to three minutes at a time then it would go back to working properly and this continues to happen. No check engine codes or anything else has been thrown. Does this sound like coolant temp. sensor is bad possibly? If anyone has some advice it would be greatly appreciated thanks.

The first thing you need to do is pressure test the cooling system to find any leaks. After all leaks are resolved, vacuum fill the system to be sure all air is removed. make sure the electric fan is working. ~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~~ We offer help in answering questions, clarifying things or giving advice but we are not a substitute for an on-site inspection by a professional.

The fan works only when it gets warmer than it should be. At first it seemed like it didn't work so I stuck my power test light to it and gave it power and it came on. I even checked for a possibly blown relay but everything checked out fine. As far as the pressure test goes when I purchased the car it a few weeks ago it had no leaks in the system. If you remember I was having problems with the car stalling out once it reached normal running temp but only when I would come to complete stop and try to take off again it still has this same problem. It wants to die when given throttle on take off like cuts out. When sitting idling it is perfect no slight miss or anything. The car runs to well for it to be a blown head gasket issue. Also Hammer, the night I bought the car after installing the Steering knuckle and coolant reservoir I left the shop for a test drive. About a mile down the road it started getting hot so I turned around, it didn't get above 230 degrees. Well I added more coolant and let it run for about 20 minutes and it hasn't gotten above normal until yesterday. Possibly same issue?

The fan is fine. That's the way it's supposed to work.
