Engine Swap 5.7L to 5.0L K1500 Chevy Sign In

Have traded for a 1994 K1500 5.7L that has 1995 5.0L installed. No Check Engine lite codes yet motor belches black on startup until motor warms up. I have check water temp sensor and resistance measure very close to book data at cold and warmup temps. Does anyone know what the water sensor/switch in the head is for or have any recommendations on what to check?

Generally near the thermostat for coolant temp sensors, T

i would check the emmission EGR EGR vaccume solindoids etc
