Overheating Problem - So Confused

I have a 2003 Pontiac Grand Prix. The other day my cars temp gauge was climbing. Every time I floored it, the temp would go back down. I would only have heat when I floored it. Every time I let off the gas, it went cold. I thought maybe my thermostat was shot or blocked. I replaced my thermostat and water pump. It is still doing it. Now I am confused and completely clueless. I thought maybe I have a blockage and would need a pressure flush. What are other ideas and options to determine what is what with my car. At the rate I'm going, I will run out of money in no time

Those are good about trapping air and are a pain to bleed out. You might need to flush the system out including the heater core to be sure you don't have dex-sludge gumming up the works. Replace the radiator cap too if you service the system. Before you do that remove the radiator cap with the engine cold and see what the coolant level is in the radiator. If you can get your hands on a pressure tester, make sure you don't have any leaks. Those are known for lower intake manifold gasket leaks. Another possibility if none of that works is you could have combustion gases leaking into the coolant system causing those symptoms. Def doesn't sound easy or cheap. I will have to contact a mechanic tomorrow and see if they can look at it for me so I at least know what's what. I do want to add a couple of things for general knowledge regarding this topic. I did just replace the engine september 2011. I paid extra for a low mileage engine. When I had it put in last year, it only had 30,000 miles. Also, I do have that brown sludge in the engine. Its always stuck to the radiator cap and coating the shaft every time I take it off. I contacted a radiator guy and he told me that sometimes when you swap an engine out, it gets like that. The car itself has 160,000 miles. Also I did just have the coolant system pressure flushed by a professional who has been in the business for a very long time. I don't know if any of these things help or change anything. I'm just putting it out there in case it does
