The specification on my Jeep liberty 2005 says that I can tow 5000 pounds. Does this include then cargo in the trunk of my jeep?

I'm actually shocked it's says it can haul 5,000 lbs! A hitch may say that but can the vehicle handle that much? Not well or for long with that vehicle IMO. That would be the weight of the trailer. Cargo in vehicle you still shouldn't exceed the gross vehicle weight (GVW) trailer or not. That's weight of vehicle and it's cargo. Many vehicles list this on a door jam,

There is no way in Hell I would ever attempt to pull 5000 pounds in a Liberty. Even iv you were able to get it rolling, the brakes would be inadequate to stop the vehicle safely. 5000 pounds will push that vehicle all over the place.

There has to be some confusion with this. OP (original poster) this vehicle is not up to that much weight. I think you may be reading something about perhaps an aftermarket trailer hitch not the vehicle as a whole.
You can buy trailer hitch balls with rating right on the ball that doesn't mean the hitch or vehicle is all in order. As Hammer just said brakes if nothing else couldn't be up to that much weight. Yes - most trailers that weigh that much - even lots less will have brakes on the trailer - couple types so this gets involved.
That's just about stopping the set up, vehicle and trailer. Now consider the tow vehicle's ability to cool itself, that gets into extremes like extra cooling for engine, transmission fluid, even the engine oil and more.
Consider what the use would be too. Once for a couple miles or some long term use of a load like that. Once - perhaps just hire it done. Long term for really hauling that much weight this is the wrong vehicle,

The wheelbase is too short. It will flip that "car" over in a heartbeat.

5000 pounds is more than a Liberty even weighs. Guessing its a hitch weight rating you're seeing. Look in your owner's manual or on the door jam sticker. GVWR is the max you can load the thing down with by itself. This is the weight of the vehicle, cargo and passengers. These things weren't made to do more than maybe tow a small ATV trailer or something like a 14 foot boat.
