2005 Holden Crewman 3.6l V6, 63 000km.I need to add about 500ml water every week and there is an oily residue in the water reservoir. It still runs perfect and there is no sign of moisture in the oil system. What could be the problem?

Don't know this vehicle specifically at all but doesn't matter. This smacks of a head gasket problem. Absolutely keep a sharp eye on it and don't allow it to get low, overheat or get water/coolant in the oil. Get this properly diagnosed and fixed now as it sounds like there's no further damage that can and will happen if neglected so get right on it. Good luck - hope something simpler is found but so far it sounds like a head gasket problem, T
