I have a 1999 Honda shadow ace 750. It has 16000 miles and is in great condition, it drove it home in march over an hour on the freeway. I have not risen it much since then but every time I do it runs great around the neighborhood. Whenever I go on the highway, or over 55 mph it loses power and then dies.

If my memory serves me right, this has twin carburetors right?
If the bike has been sitting a long time I would pull both carbs and clean and rebuild them, might want to remove the fuel tank and clean it out and replace the strainer in the petcock.
After that carb adjustments may be necessary.

PS: A valve adjustment would not hurt either while the tank is removed.

I vote partially plugged tank inlet screen, fuel filter or failing fuel pump. or possible electrical issues. You need to see what it missing when it wont start fuel or spark.. I know these carbs have very fine jets and if you let them get gummed up your screwed. You have to get it rebuilt with someone that has a ultrasonic cleaner.

Next time it stalls out try applying the choke slowly and see if it fires up if it does that indicates a lean condition (not enough fuel).

Yeah, bikes with carbs dont like to sit with fuel in them for long.
Dirty carbs are probably the most common thing i have to fix on bikes, atv's,lawn mowers, ect... cause people never drain the gas out on them before storage.
