1989 Nissan Pathfinder intermittently dies

I have a 1989 Nissan pathfinder, v6, 4wd, carburetor, automatic transmission. About a year and a half ago, during the summer, it sometimes stalled/died while driving it. After it sat and cooled down for about 15 minutes, it would then run again. It suddenly stopped and has worked fine until just recently. It has started to do it again. It will die while driving down the street. It will start back up again, sometimes immediately, sometimes after sitting for 5-20 minutes. However, after it starts back up, it will only rev up to 3000 rpms. it will rev up to just past 3000 rpms, cut out, then rev back up, then cut out. It continues this cycle. After the truck sits for awhile, this issue goes away and it revs up fine past 3000 rpm's, which tells me it is probably thermal related. I am currently unemployed and don't have money to replace parts as a process of elimination. I am hoping that there is someone that has seen this problem before and find out what the most likely part/failure is

That truck didn't come with a carburetor. Are you sure about that?

This truck was manufactured with a computer and fuel injection so if someone has Frankensteined it along the way, good luck trying to diagnose it.

1989 pathfinder was manufactured with a carburetor. The following year in 1990 it received an upgrade and came with fuel injection.

No, not in the US it didn't. Not according to Alldata and that is factory supplied info. There was only one engine offered for that vehicle. It was the VG30i. The {i} meaning injected.

He is probably confusing the TBI for a carb.

I'm sure he is. They have never made a carbed Pathfinder of any year.
Until he resolves that issue, I'm not going any further.

If it has an idle surge, you should look for vacuum leaks or low fuel pressure. You'll have to T a fuel pressure gauge into the supply side of the system to monitor fuel pressure.
Your engine is fuel injected. What looks like a carb is actually a throttle body injection unit. If you remove that metal cap in the middle of the throttle body, you'll see two fuel injectors that look like this:
